Types of honey

I was speaking at the senior center earlier this week and had folks ask about if honey from different flowers tastes different. I remembered this photo and thought I would share it with you. It shows three different harvests in one bottle. It all happened when I was trying to consolidate open bottles.

Most commercially produced honey is blended to a “flavor profile” so that every bottle tastes the same. I prefer to taste the different flavors every harvest and don’t blend. To me, that’s one of the special things about local honey.
